Red Velvet Cupcakes

Hi guys! I wanted to show you what I made for Valentine's this year even though it was ages ago. I made red velvet cupcakes with cream cheese frosting, yum! Red velvet definitely seems quite generic to make on Valentine's Day since it's red in colour and somehow that red colour makes it taste better than if it was just brown. We all know red velvet is just cocoa flavouring with added vinegar (to make it naturally red) and to emphasise the red even more, food colouring is added. My cupcakes turned out pretty well. I think I baked it a bit longer than the recipe because the mixture was quite wet and it didn't finish cooking after 18 minutes so I just left it in the oven and checked up on it every now and then. I halved all the ingredients because I only wanted to make 12 cupcakes. I also reduced the powdered sugar in the frosting because 3 cups seemed way too much for me. Even though i reduced it, the frosting was still REALLY sweet. The cupcakes had just the right amount of sweetness but I felt the frosting was a bit overpowering so when i ate it, I took some of the frosting off. If you guys like really sweet frosting, then don't reduce the sugar. I really love sweet things but even for me, it was like WOAH sugar attack. I added some red velvet cupcake crumbs on the top and some love heart shaped candies to make it look better. Overall, I think it turned out pretty well so I'd definitely recommend this recipe. I love Bakerella recipes (especially the Oreo Cupcake recipe that i made in the past). If you make this recipe, please let me know how your cupcakes turn out!
